Preparation
With a food processor or grater finely chop the potatoes and onions.
Place the potatoes and onions in a rag and squeeze to remove all the excess water.
In a deep bowl mix the flour, the egg, and season with salt and pepper.
Add the potato and onion mixture and mix well.
In a skillet over medium heat heat 4-5 tablespoons of vegetable oil.
Place a spoonful of the potato mixture and flatten with the spoon, dora approx. 2 minutes on each side. Remove from the pan and place on blotting paper towels.
Serve the pancakes decorated with chives or accompanied by cream or a dip.
