Combine in a bowl the potato, cheese, cilantro, and yolk.
Lightly flour the surface where you will be working (make sure it's clean) and roll the potato mixture into sticks that are 2 centimeters wide. Cut these sticks lengthwise to the size of a finger.
Using a brush, coat the sticks with milk and bread them with sesame seeds; you can use other seeds if you prefer.
Place the sticks on a baking tray with a little oil and bake for 10 minutes until they are golden and crispy.
