Prosciutto rolls with fig, goat cheese, and arugula

Prosciutto rolls filled with figs, arugula, and goat cheese inside. You can also prepare them with brie cheese.

  • 4 cups extra virgin olive oil
  • 2 tablespoons lime juice
  • 4 teaspoons lime zest
  • 12 slices prosciutto, or prosciutto
  • 16 figs
  • 1 cup goat cheese, fresh at room temperature
  • bunches arugula, stemless

  • Mix the oil, lemon juice, and lemon zest in a medium bowl. Place the prosciutto with a 2-centimeter gap between each and spread with goat cheese. Place figs on top of the cheese and the lemon mixture above. Add salt and pepper. Then place 6 arugula leaves on top of each slice of prosciutto.
  • Starting at the end of the prosciutto, roll the prosciutto and cut the rolls in half. Place toothpicks in each roll and serve.
