Pumpkin Croquettes

These croquettes are baked and are light and delicious. They feature a mix of mint and basil that makes their flavor unique and delightful. They are an excellent option as a snack or as a side dish for another meal. Additionally, they are very easy to prepare.

  • 3 zucchinis
  • 2 eggs
  • 1 cup flour
  • 1 cup breadcrumbs
  • 2 tablespoons peppermint, chopped
  • 4 tablespoons basil, chopped fresh
  • pepper
  • lime, for accompaniment

  • Wash and dry the pumpkins. Cut into slices 2 cm wide.
  • In a bowl, mix the flour with the herbs and season with salt and pepper.
  • Dip each pumpkin slice in egg whites, then in flour, then again in egg whites, and finally in breadcrumbs.
  • Preheat the oven to 200 degrees Celsius.
  • Arrange the battered pumpkins on a baking tray lined with parchment paper and bake for 7 minutes. Remove from the oven.
  • Season with salt and pepper before serving.
