In a third deep bowl, mix the flour and cornstarch.
Heat the oil in a large skillet until ready for frying.
Cut the Manchego cheese into rectangles (the fingers) and dip each one in the flour mixture, then in the egg mixture, and finally in the breadcrumb mixture.
Fry each finger until golden (approximately 45 seconds) and drain well on a paper towel to remove excess grease.
