These delicious salmon croquettes are a variation of the American version of crab cakes but made with fresh salmon. They are very easy to make and very tasty.

500 grams salmon fillet, chopped
3 slices white bread, hard in crumbs
1 egg, lightly beaten
1/4 cups mayonnaise
1/2 tablespoons cumin
1/4 tablespoons cayenne pepper
2 tablespoons chives, freshly chopped
1 1/2 tablespoons lime zest
2 tablespoons olive oil
3/4 cups plain yogurt
1 tablespoon lime juice
salt

In a deep bowl, mix the salmon, breadcrumbs, egg, spices, scallions, lemon zest, and season with salt and pepper.
Form 4 large croquettes with the mixture.
Heat the oil in a pan over high heat for 2-3 minutes. Cook the croquettes for 3-4 minutes on each side.
Remove the croquettes from the oil and drain on paper towels to remove excess grease.
To make the accompanying sauce, mix the yogurt, mayonnaise, lemon, and season with salt and pepper. Serve with the croquettes.
