Salmon Croquettes

These delicious salmon croquettes are a variation of the American version of crab cakes but made with fresh salmon. They are very easy to make and very tasty.

  • 500 grams salmon fillet, chopped
  • 3 slices white bread, hard in crumbs
  • 1 egg, lightly beaten
  • 1/4 cups mayonnaise
  • 1/2 tablespoons cumin
  • 1/4 tablespoons cayenne pepper
  • 2 tablespoons chives, freshly chopped
  • 1 1/2 tablespoons lime zest
  • 2 tablespoons olive oil
  • 3/4 cups plain yogurt
  • 1 tablespoon lime juice
  • salt
  • pepper

  • In a deep bowl, mix the salmon, breadcrumbs, egg, spices, scallions, lemon zest, and season with salt and pepper.
  • Form 4 large croquettes with the mixture.
  • Heat the oil in a pan over high heat for 2-3 minutes. Cook the croquettes for 3-4 minutes on each side.
  • Remove the croquettes from the oil and drain on paper towels to remove excess grease.
  • To make the accompanying sauce, mix the yogurt, mayonnaise, lemon, and season with salt and pepper. Serve with the croquettes.
