These rich salmon croquettes are a variation of the American version of crab cakes but with fresh salmon. They are very easy to make and very rich.

Ingredients

2 portions
  • 500 grams salmon fillet, chopped
  • 3 slices White bread, hard in crumbs
  • 1 egg, slightly beaten
  • 1/4 cups mayonnaise
  • 1/2 tablespoons cumin
  • 1/4 tablespoons cayenne pepper
  • 2 tablespoons chives, chopped fresh
  • 1 1/2 tablespoons lemon zest
  • 2 tablespoons olive oil
  • 3/4 cups natural yogurt
  • 1 tablespoon lemon juice
  • salt
  • black pepper

Preparation

In a deep bowl, mix the salmon, the ground bread, the egg, the spices, the scallion, the lemon zest and season with salt and pepper.
Form 4 large croquettes with the mixture.
Heat the oil in a pan over high heat for 2-3 minutes. Cook the croquettes for 3-4 minutes on each side.
Remove the croquettes from the oil and dry with paper towels to remove the excess fat.
To make the sauce that accompanies them, mix the yogurt, mayonnaise, lemon and season with salt and pepper. Serve with the croquettes.

PRESENTATION

Serve 2 croquettes, the accompanying sauce and decorate the dish with sliced ​​lemon.

TIPS

This recipe can also be made with canned tuna or crab.
