Slice the cemitas in half and remove some of the bread crumbs, then place them on a tray.
Cut the avocado and remove the pit, then use a spoon to spread the avocado on the bread, forming a semi-thick layer. Add enough cheese, two more tablespoons of avocado, chipotle peppers, and a slice or as many as you prefer of onion. Drizzle with olive oil, add a little salt, and cover with the top.
