  • 4 tablespoons red onion, finely chopped
  • 4 stems celery, finely chopped
  • 1/4 cups corn kernels, yellow
  • 1/4 cups heart of palm, finely chopped
  • 1/4 cups peas
  • 4 tablespoons pickled chiles, finely chopped
  • 3/4 cups Greek yogurt
  • 1/4 cups jocoque
  • salt and pepper
  • 8 slices Bimbo® vital blueberry bread with walnuts and bran
  • 1 cup spinach
  • 1 cup alfalfa sprouts
  • 1 avocado, in slices

  • In a bowl, mix the tuna with the onion, celery, corn, hearts of palm, peas, pickled peppers, the pickling juice, yogurt, and jocoque, and season with salt and pepper.
  • Assemble the sandwich by placing spinach, alfalfa sprouts, and avocado on four slices of Bimbo® Vital blueberry bread with nuts and bran. Add a bit of tuna salad and top with another slice of bread.
  • Serve and accompany with green salad.
