Fried Egg Sandwich with Mozzarella

  • 8 slices Bimbo® multigrain bread
  • 1 cup Mozzarella cheese, grated
  • 2 tablespoons vegetable oil
  • 8 eggs
  • 4 pinches salt
  • 4 pinches pepper
  • 8 slices smoked bacon, baked and crispy
  • 1 cup arugula
  • 1/2 onions, sliced into rings

  • Preheat the oven to 180° C.
  • Place some mozzarella cheese on a slice of Bimbo® Multigrain Bread, bake until the cheese is melted. Remove from the oven and set aside.
  • Heat the oil in a skillet over medium heat and fry the eggs. Make sure they remain soft. Season and set aside.
  • On another slice of Bimbo® Multigrain Bread, place the egg, add bacon, arugula, and red onion. Top with the slice of bread with cheese and enjoy.
