Cut the canned pineapple slices into pieces and set aside.
Julienne finely: carrot, onion, and leek, and sauté them in a pan with sesame oil. Add a teaspoon of finely chopped ginger, let it cook a bit, then add rice vinegar and soy sauce to season. Let it cool a little and add a teaspoon of sesame seeds. Set aside.
In a pan, place the slices of bread with butter on both sides until they are golden brown and set aside.
Place 2 slices of ham on 4 pieces of bread, and on top of the ham, add a good amount of the sautéed vegetables. On top of the vegetables, place some pieces of the canned pineapple, cover with the other pieces of bread to make 4 sandwiches, and on each sandwich, place a slice of manchego cheese so it goes into the oven for 4 or 5 minutes, allowing the GRATIN to be on the outside.
