Bread with Chorizo and Chimichurri

3 chorizos, Argentinian or Spanish bread cut in half lengthwise
1/2 cups fresh parsley, finely chopped
2 cloves garlic, finely chopped
2 tablespoons fresh oregano, finely chopped
3 tablespoons white vinegar
1/2 cups olive oil
salt and pepper, to taste
6 baguettes, medium

Grill or pan-fry the chorizos.
Cut the baguettes in half and toast them a bit in a pan.
Place the chorizos inside the bread, 2 halves per bread.
Mix all the remaining ingredients to make the chimichurri and add them over the chorizos.
