Bread with Chorizo and Chimichurri

A quick and tasty lunch without much complication. I highly recommend it!

  • 3 chorizos, Argentinian or Spanish bread cut in half lengthwise
  • 1/2 cups fresh parsley, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 tablespoons fresh oregano, finely chopped
  • 3 tablespoons white vinegar
  • 1/2 cups olive oil
  • salt and pepper, to taste
  • 6 baguettes, medium

  • Grill or pan-fry the chorizos.
  • Cut the baguettes in half and toast them a bit in a pan.
  • Place the chorizos inside the bread, 2 halves per bread.
  • Mix all the remaining ingredients to make the chimichurri and add them over the chorizos.
