1/4 cups fresh cilantro, (for the dressing)
1/4 cups sour cream, (for the dressing)
2 tablespoons olive oil
1 tablespoon lime juice, (for the dressing)
1/2 teaspoons garlic powder
1 teaspoon salt
1/2 teaspoons pepper, (for the dressing)
1 chicken breast, cooked and shredded
1 cup celery, sliced
1/2 cups dried cranberries
1/2 cups walnuts, chopped
8 slices bread, Saníssimo® gluten-free

For the dressing, place all the ingredients in the food processor and process until smooth. Set aside.
In a bowl, mix the chicken with the celery, cranberries, and walnuts. Add the dressing and mix very well.
Place the chicken salad on two slices of bread and enjoy.
