Egg, Asparagus, and Red Onion Sandwich

  • 1 teaspoon butter
  • 1 bunch asparagus, cleaned and halved
  • 1 pinch salt
  • 1 pinch pepper
  • 8 slices bread, Saníssimo® gluten-free
  • 4 tablespoons mustard seed
  • 4 eggs, cooked, sliced
  • 1/2 red onions, cut into strips
  • 1 tablespoon fresh dill

  • In a medium skillet, cook the asparagus with the butter for 3 minutes or until soft but still crunchy. Season and set aside.
  • Spread a tablespoon of whole grain mustard on a slice of bread, place the asparagus so they don’t fall out.
  • Add slices of cooked egg, onion, and dill, cover and serve.
