Fried Egg Toast with Fried Parsley

  • 1/4 cups vegetable oil, for frying the parsley
  • 1 bunch fresh parsley
  • 1 pinch salt
  • 4 eggs
  • 4 tablespoons vegetable oil
  • 4 pinches salt
  • 4 pinches pepper
  • 1 package goat cheese, (150 g)
  • 4 slices bread, Saníssimo® gluten-free, toasted

  • In a skillet over low heat, heat the oil and fry the parsley, making sure it doesn't burn. Drain on paper towels, season with salt, and set aside.
  • In a skillet over medium heat, heat the oil and add the eggs one by one. Cook until the yolk is cooked but soft. Season with salt and pepper and set aside.
  • Place a bit of goat cheese on each piece of bread, followed by fried parsley, and finish with the fried egg. Serve immediately.
