Grilled Panela Sandwich

  • 8 slices panela cheese, thick
  • 4 tablespoons low-fat mayonnaise
  • 4 tablespoons Dijon mustard
  • 8 slices turkey breast, thin
  • 1 cup spinach
  • 2 tablespoons butter

  • Heat a grill pan with cooking spray and grill the panela cheese on both sides over medium heat. Set aside.

  • Heat a skillet over low heat with butter and toast the sandwich on both sides until golden brown. Serve immediately.
