A delicious grilled chicken sandwich with sun-dried tomato, grilled onion, and goat cheese. The chicken is marinated with spices and vinegar and it tastes amazing.
Place the chicken in a deep container and marinate with vinegar, olive oil, garlic, and rosemary. Cover and refrigerate for at least 3 hours.
Prepare your grill over medium heat.
Season the chicken breasts with salt and pepper and cook on the grill along with the red onion. Cook for 10 minutes or until the breasts and onion are well cooked.
Heat your bread on the grill as well to make it slightly toasted.
To assemble the sandwich, take the bread and place a layer of sun-dried tomato. On top of it, add a chicken breast, some grilled onions, and a bit of arugula.
Spread a little goat cheese on the other slice of bread and close your sandwich. Repeat with all the breads.
