A delicious gourmet panini that will captivate you with its secret ingredient which is caramelized onion in red wine, in addition to the delightful combination of serrano ham, manchego cheese, and chihuahua cheese.
Place the onions in a hot pan with the two tablespoons of olive oil, season with pepper and salt. Cover and cook on very low heat for 20 minutes, occasionally uncovering and stirring the onions. The onions will release liquid, once this happens uncover and let it evaporate. Continue cooking the onions until they become soft.
Add the honey and cook for a few more minutes. Add the bay leaf and the red wine and cook until it becomes like a kind of honey, for about an hour. Stir occasionally.
Add the balsamic vinegar and let it return to a consistency like a type of honey. Taste and add salt, pepper if you think necessary. Increase the heat slightly and stir constantly until the onions become shiny and you have a smooth consistency.
Cut the bread in half, you can remove some of the crumb or leave it as is. Add a bit of the caramelized onions, heat them again in a pan for 5 minutes.
Continue assembling the panini by adding a layer with half of the manchego cheese and another layer of chihuahua cheese. On top add a well-served layer of serrano ham. Drizzle a little olive oil on the top slice and season to taste with pepper.
Heat the panini press and place one panini at a time. Press down with the top part and watch the panini. Remove it once you see the cheese has melted.
