Ingredients: 2 red onions, medium, sliced into julienne; 2 tablespoons olive oil; 1/4 teaspoons salt; 4 teaspoons honey; 1 leaf bay; 1 cup red wine; 3 tablespoons balsamic vinegar; 2 ciabatta rolls, large, with sunflower seeds; 200 grams serrano ham; 100 grams Manchego cheese; 100 grams Chihuahua cheese; extra virgin olive oils; pepper; arugulas, (optional)

Place the onions in a hot pan with the two tablespoons of olive oil, season with pepper and salt. Cover and cook on very low heat for 20 minutes, occasionally uncovering and stirring the onions. The onions will release liquid, once this happens uncover and let it evaporate. Continue cooking the onions until they become soft. Add the honey and cook for a few more minutes. Add the bay leaf and the red wine and cook until it becomes like a kind of honey, for about an hour. Stir occasionally.
