Manchego Cheese and Apple Panini

If you love sweet flavors mixed with savory, this panini might be perfect for you. It includes some fig jam that contrasts with the acidity of the apples and the saltiness of the Manchego cheese.

4 telera rolls, cut in half
100 grams Manchego cheese
1 apple, in thin slices, peeled
fig jam, or apricot jam, as needed
olive oil
200 grams deli ham, optional

Brush one half of the rolls with olive oil and cover the other half with fig jam. If you don't have fig jam, you can use apricot jam.
Slice the apples and Manchego cheese. Place them on the bread. Add ham to taste.
Close the sandwiches and place them on a closed panini grill.
Cook over medium heat until the cheese melts.
Serve hot.
