Sandwich for a Healthy Breakfast

Delicious turkey sandwich for a complete and healthy breakfast.

  • 2 tomatoes
  • 4 eggs
  • 4 slices wholemeal bread
  • 8 slices turkey breast
  • 50 grams fresh spinach
  • salt, and pepper

  • Wash the tomatoes, cut them into quarters, and place them on a baking sheet lined with parchment paper with the seeds facing up, season with salt and pepper to taste.
  • Bake at 200 °C for 25 minutes or until lightly golden.
  • Toast the bread.
  • In a medium pot, bring water to a boil halfway.
  • Once it boils, break the eggs one by one.
  • Leave them until the water comes to a boil again, turn off the heat, and let sit for 4 minutes.
  • Place the bread on the plates, add two slices of turkey breast, then the spinach, and then an egg, removing it with a slotted spoon and draining the excess water.
  • Place two tomatoes on each piece of bread and serve immediately.
