Sandwich with Grilled Vegetables and Goat Cheese

Delicious ciabatta sandwich filled with grilled vegetables and goat cheese.

  • 4 ciabatta rolls
  • 1 eggplant
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 bunch arugula
  • 1 tomato
  • 100 grams goat cheese
  • 2 tablespoons olive oil
  • 1 pinch thyme
  • salt

  • Preheat the oven to 150°C.
  • Slice the eggplant, bell peppers, and tomatoes. Mix with 1 tablespoon of olive oil, salt, pepper, and thyme. Bake for 60 minutes.
  • Take the bread and cut it horizontally, add a base of olive oil (1 tablespoon).
  • With a knife, place the goat cheese on one slice, and on top of it, add the vegetables. Add fresh lettuce and close the sandwich.
