Ingredients

4 portions
  • 4 ciabatta bread
  • 1 eggplant
  • 1 red pepper
  • 1 yellow bell pepper
  • 1 bunch arugula
  • 1 tomtato
  • 100 grams goat cheese
  • 2 tablespoons olive oil
  • 1 pinch thyme
  • to taste salt

Preparation

Preheat the oven to 150 ° C.
Cut the aubergine, peppers and tomatoes into slices. Mix with 1 tablespoon of olive oil, salt, pepper and thyme. Bake for 60 minutes.
Take the bread and cut horizontally, place a base of olive oil (1 tablespoon).
With a knife place the goat cheese on a slice, and on it the vegetables. Add the fresh lettuce and close the sandwich.
