Shrimp Chipotle Sandwich

  • 1/4 onions, grilled
  • 1 clove garlic, grilled
  • 1 tomato, grilled
  • 1/4 cups chipotle chile in adobo sauce
  • 1/4 cups orange juice
  • 1/2 kilos medium-sized shrimp, clean and peeled
  • 1/2 cups lime juice
  • 1 teaspoon Knorr® granulated chicken bouillon
  • 1/2 teaspoons pepper
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, finely chopped
  • 4 tablespoons Hellmann's® real mayonnaise
  • 4 artisan bread rolls
  • 1/2 cups refried beans
  • 1 avocado, in slices

  • For the sauce, blend the onion with the garlic, tomato, chipotle pepper, and orange juice. Set aside.
  • Marinate the shrimp in a bowl with lime juice, Knorr® Suiza chicken broth, and pepper for about 10 minutes.
  • Heat a skillet over medium heat with olive oil and cook the garlic for one minute, add the shrimp without the marinade, cook for 3 minutes, and incorporate the sauce. Once it comes to a boil, reduce the heat and cook until thickened.
  • Remove from heat and add Hellmann's® Classic Mayonnaise, mix and adjust seasoning. Set aside.
  • Open the bread in half and spread the bottoms with a bit of hot refried beans, add the shrimp mixture and finish with avocado slices. Serve.
