Mini Hawaiian Sandwich

  • 4 cups wheat flour, for the bread
  • 1 1/2 teaspoons salt, for the bread
  • 1 tablespoon dry yeast, for the bread
  • 1 1/2 cups milk, for the bread
  • 1 cup butter, soft for the bread
  • 2 egg yolks, for glazing the bread
  • 1/2 cups milk, for glazing the bread
  • 1/2 cups mayonnaise, with chipotle
  • 2 cups deli ham
  • 2 cups American cheese, in slices
  • 2 cups pineapple, in triangles
  • 1/3 cups butter, melted
  • French fries, for accompaniment

  • Mix the flour with the salt, yeast, and milk in a mixer with a hook; add the butter, beat until incorporated and form an elastic dough. Transfer to a greased container and cover with non-stick plastic, let rest for 30 minutes or until it doubles in size.
  • Prepare a glaze for the bread with the egg yolks and milk. Punch down the dough, divide it, and make balls of about 40 grams using your hands on a floured surface. Arrange on a greased baking sheet, brush with the mixture, and let rest for 15 minutes; make sure the dough does not dry out.
  • Reapply the glaze on the rolls and bake for 30 minutes at 190 °C. Remove from the oven and let cool.
  • On a cutting board, slice the bread, spread with chipotle mayonnaise, then place the cheese, ham, and pineapple; cover with the bread, brush with butter, and bake at 190 °C until golden and the cheese melts.
  • Serve with potatoes and your favorite drink.
