  • Cook the chicken with bay leaf, pepper, one clove of garlic, and a piece of onion, adding salt to taste, wait until it is completely tender and drain the water.
  • Boil the tomatoes and blend them with 2 cups of warm water along with a piece of garlic, onion, and a pinch of salt, cumin, and clove. Season the sauce in a pan with a tablespoon of oil and add oregano.
  • Separately, cook the chiles with garlic and onion. Blend to prepare the spicy sauce, which you can add to the tomato sauce according to your taste.
  • Open the bolillos in half, remove the crumb, spread refried beans on both sides, fill them with chicken, and immerse them in the red sauce, add the spicy sauce if desired and enjoy.
