Delicious recipe, easy to prepare, and you'll be surprised how your family asks for more as the combination of tuna salad, bread, and cheese is irresistible.
Preheat a large skillet or griddle over medium-low heat.
Drain the cans of tuna very well and place them in a bowl. Add chopped tomatoes, onions, pickles, and pickled jalapeños (optional), along with the mayonnaise. Mix everything very well.
Spread butter on one side of each slice of bread, place 4 slices in the skillet with the buttered side down.
Add a slice of cheese to each piece of bread, 1/4 of the tuna mixture or enough to cover it. Place another slice of cheese and top with another slice of bread so that the butter is on the outside.
When the bread turns golden, carefully flip the sandwich to prevent the tuna mixture from spilling out and wait for the other side to brown. Serve and enjoy.
