Turkey Leftover Panini

This turkey panini with pesto mayonnaise recipe is great for using leftover turkey. You can add sun-dried tomatoes for extra flavor.

  • 2 tablespoons mayonnaise
  • 4 teaspoons pesto
  • 8 slices grain bread
  • 16 slices provolone cheese, Swiss cheese
  • 8 slices tomato
  • 1 tablespoon butter

  • Mix the mayonnaise and the weight, and spread it on 4 slices of bread. Put a generous amount of turkey on top, a couple of thick slices of provolone cheese, and 2 slices of tomato. Cover with the other slices of bread.
  • Spread butter on the tops of the bread and place on a grill or sandwich maker to brown the bread and melt the cheese (about 3 minutes on each side or 6 minutes total).
