Vegetarian Sandwich with Goat Cheese

This is the best vegetarian sandwich, with its creamy avocado dressing, accompanied by vegetables and a unique touch from the goat cheese. Best of all is the delicious whole wheat bread that makes it spectacular.

  • 1 avocado, ripe
  • 1 clove garlic
  • 1 tablespoon onion
  • 4 tablespoons mayonnaise
  • 2 tablespoons lime juice
  • 1 pinch salt
  • 1 pinch pepper
  • 16 slices wholemeal Oroweat® bread
  • 2 red beefsteak tomatoes, sliced
  • 2 cucumbers, sliced
  • 2 cups spinach, washed and disinfected
  • 1 cup pepper in oil
  • 200 grams goat cheese
  • 1/2 red onions, cut into rings
  • 1/2 cups olives, for garnish

  • For the dressing, blend the avocado, lime juice, onion, mayonnaise, salt, and pepper. Set aside.
  • Spread some dressing on a slice of Oroweat® Whole Wheat Bread, add slices of tomato, cucumbers, spinach, marinated peppers, goat cheese, and red onion.
  • Garnish with olives.
