Vegetarian Sandwich with Goat Cheese

This is the best vegetarian sandwich, with its creamy avocado dressing, accompanied by vegetables and has a unique touch for goat cheese. The best of all is the delicious wholemeal bread that makes it spectacular.

Ingredients

8 portions
  • 1 avocado, mature
  • 1 clove garlic
  • 1 tablespoon onion
  • 4 tablespoons mayonnaise
  • 2 tablespoons lemon juice
  • 1 pinch salt
  • 1 pinch black pepper
  • 16 slices Oroweat® Integral Bread
  • 2 beefsteak tomatoes, cut into slices
  • 2 cucumbers, cut in slice
  • 2 cups baby spinach, washed and disinfected
  • 1 cup peppers in oil
  • 200 grams goat cheese
  • 1/2 red onions, cut in hoops
  • 1/2 cups olive, to decorate

Preparation

For the dressing, blend the avocado, lemon juice, onion, mayonnaise, salt and pepper. Reservation.
Spread a little dressing on a Oroweat® Integral Bread, add the tomato slices, the cucumbers, the spinach, the peppers in oil, the goat cheese and the purple onion.
Decorate with olives.

PRESENTATION

On a table accompanied by olives.

TIPS

You can substitute mayonnaise for light cream to have a healthier version.
