Pickled Sausages

These sausages were prepared by my grandfather on weekends for family gatherings. They are a bit spicy, but with the warmth of conversations and celebrations, they are a true delicacy.

500 grams sausages
1/2 onions, medium
200 grams pickled chiles
1/2 tablespoons dried oregano
4 tablespoons vegetable oil
1 pinch salt, optional
saltine crackers, for accompaniment

In a skillet, heat 4 tablespoons of oil to sauté the onions for 3 minutes.
When the onion is transparent, pour in the sausages. Fry for 10 minutes, stirring occasionally.
Add the pickled chiles and continue cooking for 2 more minutes.
Sprinkle the oregano over the entire preparation (at this point, add a pinch of salt if desired)
Stir evenly so that the oregano incorporates into all the sausages and remove from heat.
Serve hot, accompanied by crackers.
