Swiss-style eggs

  • 12 eggs, quail
  • 10 sausages
  • bread crumbs
  • 1 onion
  • 1 clove garlic
  • 2 tomatoes

  • Boil the quail eggs in water for about 5 minutes.
  • Roast the tomatoes and garlic in the oven for about 20 minutes at 180ºC.
  • Blend the sausages until they form a paste.
  • Once the eggs cool, peel them and roll them in flour.
  • Take some sausage paste with damp hands, place the egg in the middle, and cover it completely with the paste. Form a sort of meatball.
  • Coat them in breadcrumbs and fry them.
  • For the sauce, place the tomatoes, onion, and garlic in a pan with oil until sautéed. Then, transfer to the blender until it forms a paste. Return to the heat and simmer until reduced.
  • Place it in a container and store it in the refrigerator until serving time. Once fried, serve the eggs cold or hot, whichever you prefer, accompanied by the sauce.
