Place the puff pastry on a clean surface and roll it out with a rolling pin. Cut into 36 squares.
With a brush, paint the edge of each square with the beaten egg.
Place the sausage on the pastry on the other side of the egg and roll it up. Press lightly at the end; the egg will help keep it from opening while cooking.
Place the rolls on a baking tray and bake for 10 minutes or until golden brown.
Remove from the oven and serve.
