Serrano Pepper Hummus

Hummus is a delicious dip made from chickpeas, which originated in the Middle East. Besides being very tasty, it has a high content of plant protein and is very healthy. This version adds serrano pepper and cilantro for a slightly spicy touch.

  • 4 cups chickpeas
  • water
  • 3/4 cups tahini
  • 3 tablespoons lemon juice
  • 1 clove garlic
  • salt
  • 2 serrano chiles
  • 1/4 cups cilantro
  • olive oil

  • Place the chickpeas in a pressure cooker, cover with enough water so that it exceeds the chickpeas by about 10 cm, close the pot and cook for 1.5 hours to make them soft.
  • Once cooked, blend with the help of a food processor until it becomes a paste, about 5 minutes. Add tahini, yellow lemon juice, the garlic clove, and season with salt; if necessary, to give it a bit more creaminess, add a couple of tablespoons of ice-cold water.
  • Clean the serrano pepper and chop it finely, chop the cilantro, add everything to the hummus and mix.
  • Serve the hummus with olive oil and chopped cilantro.
