Hummus is a delicious dip made from chickpeas, which originated in the Middle East. Besides being very tasty, it has a high content of plant protein and is very healthy. This version adds serrano pepper and cilantro for a slightly spicy touch.
Place the chickpeas in a pressure cooker, cover with enough water so that it exceeds the chickpeas by about 10 cm, close the pot and cook for 1.5 hours to make them soft.
Once cooked, blend with the help of a food processor until it becomes a paste, about 5 minutes. Add tahini, yellow lemon juice, the garlic clove, and season with salt; if necessary, to give it a bit more creaminess, add a couple of tablespoons of ice-cold water.
Clean the serrano pepper and chop it finely, chop the cilantro, add everything to the hummus and mix.
Serve the hummus with olive oil and chopped cilantro.
