Shrimp Croquettes with Habanero Sauce

  • 2 cups pink shrimp, in medium pieces
  • 1 potato, cooked and in small cubes
  • 1/4 cups Parmesan cheese, grated
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 egg
  • 1/3 cups breadcrumbs

  • 1 cup cream cheese, in cubes

  • 2 Habanero chiles, for the sauce
  • 1 clove garlic, for the sauce
  • 1/4 onions, for the sauce
  • 1 cup evaporated milk, for the sauce
  • 1 cup cream cheese, for the sauce
  • 1/2 cups fresh cilantro, for the sauce

  • In a bowl, mix the shrimp with the potato, parmesan cheese, garlic, onion, egg, breadcrumbs, salt, and pepper, and use your hands to form small balls. Place a cube of cream cheese in the center and finish shaping them.
  • Bread the croquettes by passing them through flour, egg, and corn flakes.
  • In a small pot with hot oil, fry the croquettes until golden and drain on paper towels to remove excess fat.
  • For the sauce, roast the chiles, onion, and garlic on a griddle. Blend with evaporated milk, cream cheese, and cilantro.
  • In a small pot, cook the sauce for 10 minutes or until thickened, seasoning with salt and pepper.
  • Serve a mirror of sauce and place the croquettes on top. Garnish with fresh cilantro leaves and enjoy.
