Change the traditional Christmas flavors and cook these croquettes with Habanero sauce, the secret is in making the sauce well and making them very crispy. In a bowl, mix the shrimp with the potato, the Parmesan cheese, the garlic, the onion, the egg, the bread crumbs, salt, and pepper, and form the balls with your hands. Place a cube of cream cheese in the center and finish shaping them.
Pass the croquettes through flour, egg and corn flakes.
In a pot with hot oil, fry the coquettes until browned and drain on absorbent paper to remove excess fat.
For the sauce, roast the chiles, the onion and the garlic in a comal. Blend with evaporated milk, cream cheese and cilantro.
In a pot cook the sauce for 10 minutes or until thick, season with salt and pepper.
Serve on a think layer of mirror and place the croquettes. Garnish with fresh cilantro leaves and enjoy.
