Smoked Salmon Blinis

A delicious snack of pancakes with smoked salmon and cream cheese. Perfect for a cocktail.

  • 1/4 cups whole-wheat flour
  • 1 pinch salt
  • 1/2 cups all-purpose wheat flour
  • 1 tablespoon butter, melted
  • 1 teaspoon baking powder
  • 1/2 cups cow's milk
  • 1 egg
  • 2 tablespoons whipping cream
  • 1/2 cups sour cream
  • 2 tablespoons mayonnaise
  • 2 teaspoons lime juice
  • 1 tablespoon chives, finely chopped fresh
  • 1 tablespoon peppermint, finely chopped fresh
  • 125 grams smoked salmon

  • Mix the flour, egg, heavy cream, milk, sugar, melted butter, and baking powder with a whisk until you have a smooth and lump-free batter. Let it rest for 10 minutes.
  • Heat oil or melted butter in a skillet and add a few tablespoons of the mixture. When bubbles appear on the surface, flip the pancakes and fry them on the other side.
  • Repeat this process with the remaining mixture.
  • For the cream, mix the sour cream, mayonnaise, lemon juice, scallions, and mint, and spread it over the pancakes.
  • Top them with a piece of smoked salmon and garnish with strips of lemon zest or a mint leaf.
