Ingredients

20 portions
  • 1/4 cups whole wheat flour
  • 1 pinch salt
  • 1/2 cups White flour
  • 1 tablespoon butter, melted
  • 1 teaspoon royal baking powder
  • 1/2 cups milk
  • 1 egg
  • 2 tablespoons whipping cream
  • 1/2 cups sour cream
  • 2 tablespoons mayonnaise
  • 2 teaspoons lemon juice
  • 1 tablespoon chives, fresh chopped fine
  • 1 tablespoon peppermint, fine, finely chopped
  • 125 grams smoked salmon

Preparation

Mix the flour, the egg, the whipping cream, the milk, sugar, melted and royal butter with a balloon whisk until you obtain a homogeneous mass without lumps. Let it rest for 10 minutes.
Heat oil or melted butter in a pan and put a few tablespoons of the mixture. When bubbles appear on the surface, turn the pancakes and chill them on the other side.
Repeat this operation with the rest of the mixture.
For the cream, mix the sour cream, the mayonnaise, the lemon juice, the scallion, the mint and spread it among the pancakes.
Cover them with a piece of smoked salmon and decorate with strips of lemon zest or a mint leaf.
