Onion Tatin Tart

  • 2 tablespoons margarine
  • 2 tablespoons extra virgin olive oil
  • 6 tablespoons brown sugar
  • 1 red onion
  • 1 white onion
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons dried thyme
  • salt and pepper
  • 250 grams puff pastry

  • We preheat the oven to 250°C.
  • We place a skillet on the heat, add the margarine, olive oil, and sugar, and mix. We add the onions cut into quarters, cooking over medium heat for 15 minutes or until the onion is golden and caramelized.
  • We stir and add the vinegar, thyme, season with salt and pepper to taste, let the liquid reduce, and remove from heat.
  • On a flat surface, we place the flour and roll out the dough with a rolling pin until we achieve the size of the greased baking dish for the tart we are going to use (23 cm).
  • We pour the onion mixture we cooked earlier into our mold and cover the baking dish with the dough, trimming the excess.
  • We put it in the oven for 20 to 25 minutes and take it out when the crust is cooked and golden. Let it rest for 10 minutes.
  • We unmold it by placing a plate over the mold and flipping it over.
