Wash and scrub the potatoes very well; then, dry them and peel them lengthwise, to a thickness of half an inch, into eight equal parts.
To prepare the potato skins, brush them with salt and butter; then, place them on a baking tray and put them in the oven for 10 to 12 minutes until they become crispy.
If desired, you can also fry them in hot oil to brown them a little more; afterwards, drain them on paper towels to remove excess fat.
