Stuffed portobello is a super easy recipe, whether as a snack or to accompany a meal like chicken or meat. Sometimes I make it for dinner. Healthy, quick, and also economical.

4 portobello mushrooms
1/2 cups cherry tomato
1 cup spinach
1 teaspoon basil
Mozzarella cheese, enough
olive oil

Preheat the oven to 250ºC. On a tray, place aluminum foil and spray a little oil.
Slice the cherry tomatoes (to make it easier, first cut them in half and then in half again).
Slice the spinach, basil, and cheese.
Mix all the ingredients, adding a little salt and pepper.
Spray a few drops of oil on the portobellos.
Stuff the portobellos with the spinach, tomato, basil, and cheese mixture.
Place in the oven for about 10 minutes and it's ready.
