Stuffed Portobello

Stuffed portobello is a super easy recipe, whether as a snack or to accompany a meal like chicken or meat. Sometimes I make it for dinner. Healthy, quick, and also economical.

  • 4 portobello mushrooms
  • 1/2 cups cherry tomato
  • 1 cup spinach
  • 1 teaspoon basil
  • Mozzarella cheese, enough
  • olive oil

  • Preheat the oven to 250ºC. On a tray, place aluminum foil and spray a little oil.
  • Slice the cherry tomatoes (to make it easier, first cut them in half and then in half again).
  • Slice the spinach, basil, and cheese.
  • Mix all the ingredients, adding a little salt and pepper.
  • Spray a few drops of oil on the portobellos.
  • Stuff the portobellos with the spinach, tomato, basil, and cheese mixture.
  • Place in the oven for about 10 minutes and it's ready.
