  • 120 milliliters Oléico® safflower oil, Gourmet Provençal Mix
  • 2 sweet potatoes
  • 3 carrots
  • 2 beets
  • 3 zucchinis
  • 2 turnips
  • 1 jicama
  • 2 apples
  • 1 cassava
  • salt, celery salt to taste
  • piquín chiles, to taste

  • Preheat the oven to 100° C.
  • Peel the vegetables, except for the zucchini.
  • Using a mandoline, slice each vegetable very thinly.
  • Place the vegetables in a bowl, pour in some oil and a bit of celery salt.
  • Place the vegetables on a silicone mat.
  • Bake the vegetables for 3 to 4 hours, checking them constantly to ensure they don’t burn. Once they come out of the oven, sprinkle them with chili piquín.
