Peel and finely chop the shallots, garlic, and parsley. Add them to a bowl along with the butter in chunks.
Mix everything with a hand mixer, stop the machine and add 1 teaspoon of ground pepper and continue mixing.

Combine everything with the help of a fork and pour into a skillet, place over heat and cook for 10 min, when the butter starts to splatter it’s time to serve, it can be in a bowl or inside the snail shells that are specially sold for this dish.
