Snails or Escargots a la Bourguignonne

Exotic French food, it can be made with snails from your own garden.

  • 60 grams shallot
  • 40 grams garlic
  • 1 bunch parsley, disinfected
  • 400 grams butter, low sodium
  • 6 dozens snail, canned
  • black pepper powder, to taste

  • Peel and finely chop the shallots, garlic, and parsley. Add them to a bowl along with the butter in chunks.
  • Mix everything with a hand mixer, stop the machine and add 1 teaspoon of ground pepper and continue mixing.
  • Drain the can of snails, rinse them and dry them with a paper towel to remove all the water.
  • Combine everything with the help of a fork and pour into a skillet, place over heat and cook for 10 min, when the butter starts to splatter it’s time to serve, it can be in a bowl or inside the snail shells that are specially sold for this dish.
