Sopecitos with Beans and Pickled Pork Cheese

  • 1 slice Capistrano® pork head cheese, cut into cubes
  • 8 sopes, made of corn
  • 1 cup refried black beans
  • 1 onion, medium filleted
  • 2 carrots, cut into julienne
  • vegetable oil
  • apple cider vinegar
  • oregano
  • salt
  • 1/2 cups Cotija cheese, grated

  • In a little oil, sauté the onion and carrot, add the vinegar, oregano, and salt to taste, let cool and incorporate the cubes of pickled pork cheese.
  • Fry the sopecitos in hot oil, place the beans at the base and add the pickled pork cheese mixture, sprinkle with grated cheese and serve. Accompany with cream.
