1 slice Capistrano® pork head cheese, cut into cubes
8 sopes, made of corn
1 cup refried black beans
1 onion, medium filleted
2 carrots, cut into julienne

apple cider vinegar
oregano
salt
1/2 cups Cotija cheese, grated

In a little oil, sauté the onion and carrot, add the vinegar, oregano, and salt to taste, let cool and incorporate the cubes of pickled pork cheese.
Fry the sopecitos in hot oil, place the beans at the base and add the pickled pork cheese mixture, sprinkle with grated cheese and serve. Accompany with cream.
