Spring Rolls with Chipotle Chicken

  • 16 leaves rice pasta
  • 1 chicken breast, cooked and shredded
  • 2 carrots, cut into thin strips
  • 1 green onion, with tail
  • 1 tablespoon ginger, finely chopped
  • 5 tablespoons soy sauce
  • 2 cups vegetable oil
  • 1 1/2 cups water
  • 1 cup vinegar
  • 4 tablespoons soy sauce
  • 3/4 cups sugar
  • 2 tablespoons ketchup
  • 2 tablespoons cornstarch
  • 3 tablespoons ground chipotle chile

  • Mix the chicken breast with the carrot, green onion, ginger, soy sauce, and let marinate for 1 hour in the refrigerator.
  • For the sweet and sour sauce, in a saucepan over medium heat add the soy sauce, sugar, ketchup, cornstarch, and chipotle, let cook for 5 minutes, remove from heat and set aside.
