For artichoke lovers, prepare these delicious steamed artichokes accompanied by a cheese sauce made with goat cheese, parmesan, serrano ham, and walnuts. It will be the perfect appetizer!

1/4 cups white wine, for cheese sauce
3 tablespoons parsley, finely chopped for cheese sauce

1/2 cups serrano ham, finely chopped, for cheese sauce
1/2 cups goat cheese, for cheese sauce
1/2 cups Parmesan cheese, for cheese sauce

To clean the artichokes, use a knife to cut off the top of each one without going halfway. Trim the tips of the leaves with scissors and remove the smaller leaves from the bottom. Peel the stems and cut off the bottom.
In a pot with boiling water, place a rack, arrange the artichokes, squeeze the lemon, add salt, and cook covered over medium heat for about 50 minutes or until, when removing a leaf, it pulls away easily.
Meanwhile, heat a small pot over medium heat with the butter, sauté the garlic and onion until transparent, add the white wine, parsley, and let reduce. Add the cream, serrano ham, goat cheese, parmesan cheese, season with pepper, and cook until thickened.
Remove the artichoke from cooking, open it wide with your hands, and drizzle with the hot sauce. Garnish with serrano ham and serve.
