Stuffed Jalapeños

  • 24 Jalapeño chiles, fresh
  • 1 package cream cheese
  • 1 package cheddar cheese, shredded 1 package cheddar cheese, shredded
  • 8 slices bacon, cooked, mashed 8 slices bacon, cooked, mashed
  • 1/4 cups wheat flour 1/4 cups wheat flour
  • 2 eggs, blended 2 eggs, blended
  • 40 cookies, RITZ Crackers, finely crushed (approx. 1-2/3 cup)
  • 2 cups cooking spray

  • Make a lengthwise cut at the top of each pepper; remove the seeds and veins.
  • Mix the cream cheese, cheddar cheese, and bacon slices. Use this to fill the peppers.
  • Coat the peppers in flour; dip them in the eggs, and then roll them in the crumbs, covering them evenly.
  • Arrange them in a shallow pot in a single layer.
  • Refrigerate for 15 minutes.
  • Heat the oil to 370F in a medium saucepan.
  • Add the peppers in batches.
  • Cook them for 3 minutes or until golden brown.
  • Drain them on paper towels.
  • Serve them hot.
