24 Jalapeño chiles, fresh
1 package cream cheese
1 package cheddar cheese, shredded
8 slices bacon, cooked, mashed
1/4 cups wheat flour
2 eggs, blended
40 cookies, RITZ Crackers, finely crushed (approx. 1-2/3 cup)
2 cups cooking spray

Make a lengthwise cut at the top of each pepper; remove the seeds and veins.
Mix the cream cheese, cheddar cheese, and bacon slices. Use this to fill the peppers.
Coat the peppers in flour; dip them in the eggs, and then roll them in the crumbs, covering them evenly.
Arrange them in a shallow pot in a single layer.
Refrigerate for 15 minutes.
Heat the oil to 370F in a medium saucepan.
Add the peppers in batches.
Cook them for 3 minutes or until golden brown.
Drain them on paper towels.
Serve them hot.
