Prepare this delicious and easy low-carb “sushi” balls snack, as they are made with Eva® cauliflower bits. They are filled with a homemade tampico, covered with tuna, salmon, and avocado. You will love them!

Cook the Eva® cauliflower bits in a pot with boiling water and salt for 3 minutes. Cut cooking in cold water and drain. Dry very well.
For the tampico, mix the surimi with the onion, chili, sriracha sauce, and mayonnaise. Season with salt if necessary.
Mix the Eva® cauliflower bits with the cream cheese and form balls with your hands, placing a little tampico in the center. Refrigerate for a few minutes to maintain shape.
Cover the balls with slices of salmon, tuna, or avocado to your liking. Decorate with sesame seeds and serve.
