"Sushi" Balls

Prepare this rich and easy snack of low-carbohydrate "sushi" balls, as they are prepared based on Eva® cauliflower bits. They are stuffed with a homemade tampico paste, covered with tuna, salmon and avocado. You will love it!

Ingredients

6 portions
  • 1 bag Cauliflower Eva® Bits, (454 g)
  • enough Water
  • to taste salt
  • 1/2 cups surimi, finely chopped
  • 2 tablespoons red onion, finely chopped
  • 1 serrano pepper, finely chopped
  • 3 tablespoons Sriracha sauce
  • 1 tablespoon light mayonnaise
  • 1/2 cups cream cheese, light at room temperature
  • 100 grams fresh salmon, (in sashimi - thin cut)
  • 100 grams fresh tuna, (in sashimi - thin cut)
  • 1 avocado, cut into thin slices to decorate
  • to taste black sesame seed, and white, toasted to decorate
  • to taste ponzu soy sauce, To serve

Preparation

Cook the cauliflower Eva® in a pot with boiling water and salt for 3 minutes. Stop cooking process in cold water and drain. It dries very well.
For the tampico paste mix the surimi with onion, chili, sriracha sauce and mayonnaise. Season with salt if necessary.
Mix the cauliflower Eva® bits with the cream cheese and form balls with your hands, placing a little tampico paste in the center. Refrigerate a few minutes to keep the shape.
Cover the balls with slices of salmon, tuna or avocado to your liking. Garnish with sesame and serve.

PRESENTATION

On a plate accompanied by ponzu.

TIPS

To shape them better, make the balls using plastic wrap. You can substitute cream cheese for jocoque for a lighter version.
