These crispy sweet potato balls filled with cheese are very tasty and different. You can eat them as a snack or as an appetizer; you decide, but don't wait any longer to prepare them.
Mix the sweet potato puree, 1 cup of breadcrumbs, cheese, and baking powder. Form balls, dip them in the egg mixture, and then roll them in the remaining breadcrumbs until evenly coated.
Heat the oil in a large pot over medium-high heat. Carefully add the balls and cook for 3 minutes or until golden brown. Drain them on paper towels. Serve hot.
